Fennel and smoked fish salad

A fragrant, peppery, delicious and well-balanced salad with smoked fish which can be eaten as a side dish or even as a main course as it is rich in proteins, vitamins and omega-3 fatty acids.

One of our main ingredients is fennel. It has a slightly sweet anise (liquorice) flavour. Its aromatic taste is so unique and its texture so crunchy. 

The Arugula and the crispy radishes give out a peppery mildly bitter and earthy flavour. 

The lemon juice and lemon zest add the sourness and fresh aroma you need. Sweet and crispy apples, together with the black raisins make up for the sweet taste.

As for the smoked fish we prefer eel from sustainable farms. Eels are a fantastic source of omega-3 fatty acids. They also contain a good amount of calcium, magnesium, potassium, selenium, manganese, zinc, iron and phosphorus. If you don’t eat eel or cannot find it you could substitute it with smoked salmon.

Fennel, raisins, radish and Vassae Olive Oil

Ingredients: Fennel, radish, lemon, raisins and of course Vassae E.V.O.O.

Earthy, pungent, crispy and very healthy, this salad will become your favourite!

Ingredients

  • 1 whole fennel

  • 150gr. arugula (preferably baby arugula)

  • 1 green apple

  • 150gr. smoked eel (or smoked salmon)

  • 1 tbsp. black raisins

  • 1-2 small radishes

  • 1/2 spring onion

  • Juice from 1 lemon

  • 1 pinch lemon zest

  • 1/2 cup of olive oil

  • A few parsley leaves

  • fennel leaves for garnish

  • salt

  • pepper

Preparation

Step 1: Take the smoked fish out of its package and cut it into diagonal strips.

Step 2: Wash the fennel, remove the hard leaves and the central core. Keep the tops and chop them finely. Cut the fennel into very thin slices with a mandolin and sprinkle them with some lemon juice.

Step 3: 
Cut the radish into thin slices.

Step 4: Peel and grate the apples, cut them into very thin slices and sprinkle with the lemon juice lemon so that they do not turn black.

Step 5: Clean, wash and dry very well the arugula.

Step 6: Mix the salad well and add the olive oil, salt and pepper.

Step 7: Put all the ingredients in a salad bowl and mix, add the raisins, olive oil, salt, pepper, juice and lemon zest.

Step 8: Add the smoked eel, the parsley leaves and the fennel tops and leaves at the top of the salad.
