Kale Vegan Salad

The most healthy and rich in flavour vegan salad!
Ingredients
- 2 cups of finely chopped kale leaves
- 2 cups of finely chopped green salad leaves (any green salad is fine, we prefer lettuce French or Greek lettuce)
- 1/2 red onion
- 1/2 a cup of tomatoes
- 8-10 medium broccoli tassels
- 1 ½ tbsp. roasted almonds
- 1 tbsp. dried apricots
- salt
- pepper
- 1/2 cup of olive oil
- 2 tbsp. white balsamic vinegar
- a few mint leaves
- a few parsley leaves
Preparation
Step 1: Wash all the vegetables very well and dry them.
Step 2: In a pan in the oven at 180 degrees, bake the broccoli with a little salt, pepper and olive oil for about 10 minutes.
Step 3: In a salad bowl, add the kale leaves and green leaves.
Step 4: Cut the red onion, the cherry tomatoes, the apricots into thin slices.
Step 5: Crush the almonds with your hands in various sizes and then throw them in the salad bowl together with the broccoli.
Step 6: Mix gently and add the olive oil, white vinegar and herbs.
