Sea bass Marinato

The Latin American ceviche is a very popular cooking method that uses the acidity of citrus juice to convert the flesh proteins of seafood or fish into an easily edible stage, resembling in texture and composition the result of mild heat treatment. We present you a Greek version of ceviche, using one of the most popular fish such as the seabass which you can find from sustainable Mediterranean fish farms

So you have second thoughts about raw fish... Is it safe? 

Things are simple, but under certain conditions: Our fish must be very fresh and of high quality. There are ways to tell if the fish is fresh but the most important is to trust your fish shop. You should also ask to fillet it, clean the bones and remove the skin. Of course, you can do it yourself at home, but they will do it better for you. This should be done right before cooking it. If the fillet sits too long it will dry out.

In this recipe, we combine the good quality fish with the freshness of the various citrus and the spiciness of the chilli flakes which will make it even more interesting.

Ingredients: Sea bass, chilli flakes, citrus juice and of course Vassae E.V.O.O.

A light delicious fresh dish which is super easy to make!

Ingredients

  • 1 kg of sea bass or 2 sea bass fillets

  • 1 lemon (juice & fillets)

  • 1 orange (juice & fillets)

  • 1 lime (juice & fillets)

  • ½ pink grapefruit (juice & fillets)

  • 1 chilli pepper

  • small basil leaves

  • 1 tbsp. chives

  • salt flakes

  • pepper

  • Vassae Multivarietal E.V. Olive Oil

  • zest of half a lime

Preparation

Step 1: Fillet the sea bass and keep two fillets. Remove the skin and bones from each fillet and cut it into very thin side slices.

Step 2: Cut with your knife a few fillets from every citrus and then squeeze them to get their juice.

Step 3: 
In four dishes, pour 1-2 tablespoons of citrus juice, a little olive oil and sprinkle some salt.

Step 5: Spread the slices of fish following the perimeter of the dish.

Step 4: Pour the remaining juices over the fish, the chopped chilli peppers, the chives and the small basil leaves.

Step 5: Sprinkle some salt flakes, pepper, grated lime and olive oil.

Serve immediately. Enjoy!
