What’s the most delicious greek healthy dish? Famous all over the world the Horiatiki or else greek salad accompanies the daily meals of the greek family as it is a tasteful sensation. We dare to say that our slight twist of the greek salad is a huge improvement that will impress you. The rock samphire, capers and olive paste will add a bit of texture and tanginess. The salty-sour feta vinaigrette will combine all the ingredients beautifully.

This salad is so simple, that there are no hidden secrets. Choosing the tastiest vegetables you can find is really important. A good quality extra virgin olive oil that goes well with salads is of utmost importance. The only proper way to finish eating this salad is by dipping your bread to the remaining juices, the olive oil and the vinaigrette at the bottom of the plate.

Tomatoes, feta, capers samphire, cucumber and Vassae Olive Oil

Ingredients: Sea bass, chilli flakes, citrus juice and of course Vassae E.V.O.O.

A modern and tasty version of the traditional greek salad!

Ingredients

  • 2 medium tomatoes

  • 150gr. colourful tomatoes

  • 1 spring onion

  • 2 small cucumbers

  • 1 tbsp. capers

  • ¼ tbsp. Pinch grated dry coriander

  • ¼ cup of pickled rock samphire

  • 1 tbsp. olive paste

  • 1 spring of fresh oregano

  • 1 spring of fresh basil

  • ½ cup of olive oil

For the vinaigrette

  • ½ cup of milk

  • 2 tbsp. red wine vinegar

  • 100gr. Feta cheese

  • ½ cup of parmesan

  • ½ cup of olive oil

Preparation

Step 1: Wash all the vegetables very well.

Step 2: In a deep bowl, cut the tomatoes into medium chunks, and the spring onions into thin slices. Cut the cucumbers in the middle lengthwise and with a spoon remove the stones.

Step 3: 
Then add the grated coriander and the caper, the olive oil, salt, the whole leaves of fresh oregano with the basil and mix.

Step 5: Put the milk, feta cheese, vinegar and parmesan in the blender, beat for a while and add the rest of the olive oil.

Step 4: Put the salad in a deep dish and with a spoon the olive paste and the feta vinaigrette.
